Ingredients
2 ½ dl (1 c.) pitted dates
2 ½ dl (1 c.) raw walnuts
2 ½ dl (1 c.) raw cashews
½ tsp salt
zest of 1 organic lemon
1 tsp lemon juice
coconut flakes for topping
Instructions
Soak the walnuts and cashews in warm water for at least 30 minutes and pour off the water. Place them in a food processor and mix until they are finely ground. (Soak the dates in warm water for 10 minutes If they are hard.) Place all the remaining ingredients in a food processor and blend until it has a fudge consistency. Stop occasionally to scrape down the sides. Remove the blade, transfer to a square tray, flatten and sprinkle with coconut flakes. Chill in the freezer for one or two hours, then cut into small bite size pieces, and transfer into a box. Zesty bites are a great snack when you crave something sweet, and can be stored in the freezer up to 3 months (if they would ever last that long…). Enjoy!
Tip
If you don’t have time to soak the nuts just add a little water to the food processor when you mix them.
