I grew up eating a lot of beans, and Mexican food has always been one of my favorites. This taco salad is very simple to make and can be varied endlessly with different vegetables and sauces. Use your fantasy to create your favorite Mexican taco.
Taco chips or taco shells
Pinto or Borlotti beans, seasoned with taco spices
grated soy cheese
Soy yogurt, natural
Taco sauce or salsa
Chop the vegetables and place in bowls (a bowl for each ingredient). Place taco chips on a plate and top with vegetables, beans, guacamole, grated cheese and soy yogurt (or fill a taco shell).
