Summer Pasta

Ingredients

1 – 2 Tbsp. olive oil

1 garlic clove

1 squash, grilled

1 eggplant, grilled

1 can garbanzo beans, drained

1 broccoli head, steam and cut into small pieces

200 g. cherry tomatoes

30 g. frozen basil or several handfuls fresh basil

4 servings of whole grain pasta, preferably warm

salt to taste

 

Instructions 

Heat the olive oil and press the garlic clove into it. Sauté for a few seconds. Add the grilled vegetables, garbanzo beans, broccoli and cherry tomatoes. Cover and allow to heat through. Add the basil and pasta. Salt to taste and serve immediately.
