Now that it’s spring and everything is turning green, it’s time to eat green. Why not eat green spinach, filled with iron and antioxidants? This recipe is an exciting way to do just that. It’s a mix between a dessert and a main dish. Thanks Georg for sharing this recipe with us.
Ingredients
1 ¼ dl. (½ c.) flour
1 dl. (¼ c.) graham flour
¾ dl. (1/3 c.) soy flour
1 pinch ground allspice
1 Tbsp. vanilla sugar
1 Tbsp. ground cinnamon
1 tsp. salt
5 dl. (2 c.) soy milk
200 g. (7 oz) chopped frozen spinach
Oil for frying
Instructions
Put the flour and the other dry ingredients in a bowl and mix with a whisk. Beat in the soy milk and stir until it becomes a smooth batter. Mix in the thawed spinach. Fry in small cakes until browned on each side. Serve with lingonberry jam.
