Scrambled Tofu with potatoes

1 large onion, diced
1 Tbsp. olive oil
4 -5 boiled potatoes
1 package firm tofu, crumbled
1 Tbsp. vegetables seasoning
Salt to taste
Soy or oat cream as needed

Sauté the onion until clear and tender. Add the potatoes and allow to lightly brown. Mix the tofu with the seasoning and add to the onions and potatoes. Allow to sauté a little together. Taste and add salt as needed. If the tofu seems dry, add some soy or oat cream to achieve the consistency of scrambled eggs.
