As the cool weather starts moving in, I like eating warm comfort foods like potatoes. They are filling and nutritious, as well as fat free. They are a good source of potassium, actually more than bananas! In this dish they come to their right with low-fat, high protein tofu. This is a great tasting way to enjoy the fruits of autumn!
Ingredients
1 kg. (2.2 pounds) potatoes, cooked and cubed
1 large onion
1 Tbsp. olive oil
1 can crushed tomatoes
2 dl. (¾ c.) Oatly cream or sour cream
1 tsp. salt
1 package marinated tofu (270 g. or 10 oz), cubed
1 handfull dill
Instructions
Sauté the onion in the olive oil until clear. Combine the remaining ingredients and place them in a baking dish. Bake in the oven until the dish is warm and a little golden brown on top.
Tip
This dish can be made ahead and baked just before serving.
