Nut loaf is one of my husband’s favorite dishes. It is a common vegetarian alternative on the Christmas table, but you don’t have to wait from Christmas to have it. This recipe comes from Georg and I really like it. Enjoy!
Ingredients
200g (7 oz) hazelnuts
2 dl (¾ c.) breadcrumbs
1 onion
2 dl (¾ c.) vegetable broth (½ cube vegetable bouillon + water)
2 dl (¾ c.) soy milk
½ dl (¼ c.) potato flour
¾ – 1 teaspoon ginger
½ dl (¼ c.) oil (such as canola)
1 teaspoon salt
prunes, if desired
Instructions
Grind the nuts and grate the onion finely, preferably in a food processor. Mix all the ingredients together. Place a baking sheet in a loaf pan, such as a bread pan. Add half of the batter into the pan. Place a line of prunes down the middle of the batter, if desired, and then pour in the rest of the batter. Bake in a water bath at 200-250 degrees until a test proves that it is not too sticky anymore and it has a golden brown crust. This usually takes about an hour.
