I like potato salad and I like Mediterranean foods, too! This tasty summer salad combines both of these tastes. The tomatoes add color and flavor and the tofu add low-fat protein. Thank you Georg for sharing this with us!
10 medium potatoes (preferably new potatoes) or whole grain pasta
1 box cherry tomatoes
1 bag of rocket salad or fresh spinach leaves
1 small can of olives
1 jar of sun dried tomatoes (preferably preserved in oil)
1 packet of marinated tofu
Boil the potatoes (or pasta) and let them cool. It is good if they don’t get too soft.
Rinse the rocket or spinach and let it drain in a colander. Cut the vegetables into bite-sized pieces. Mix all ingredients in a large bowl. Pour over the olive oil and season with herb salt. Use the oil that the sun-dried tomatoes were in for additional flavor.
