This is one of my favorite desserts. I love the flavor of lime and this cheesecake really brings it out! It is an easy recipe to make and very versatile.
Crust Ingredients
1 ½ dl. (2/3 c.) bread crumbs
1 ½ Tbsp. apple juice concentrate
3 Tbsp. water
½ Tbsp. oil
¼ tsp. coriander
Instructions
Mix all the ingredients to a crust and press it out in an oiled form. Bake at 175°C for 7 – 8 minutes. Watch carefully so that it doesn’t burn.
Filling Ingredients
5 dl. (2 c.) tofu
1 tsp. vanilla
¾ tsp. salt
1 ¼ dl. (½ c.) natural sugar
½ dl. (¼ c.) canola oil
¼ tsp. coriander
fresh pressed juice of 1 lime
fresh pressed juice of 1 lemon
grated rind from 1 lime
grated rind from 1 lemon
1 Tbsp. cornstarch
Instructions
Place all the ingredients in a mixer and mix until it is smooth and creamy. Pour over the baked crust. Bake for 20 – 30 minutes at 175°C (350° F). The cheesecake is finished when it is firm. Chill.
Tips
This cheesecake tastes best made a day ahead so that the favors can really mix. Decorate with sliced lemons or a thin layer of lemon/lime marmalade or homemade strawberry sauce or fresh fruit or berries. The options are many!
