Koldskål is a traditional Danish summer dish. It is a creamy, light, refreshing snack or even meal, when the weather is hot. Usually it is made from buttermilk, egg yokes and sugar, topped with cardamom flavored cookies. Here is a plant-based version.
1 l. sweetened soy milk
5 Tbsp. sugar or other sweetener, to taste
250 g. silken tofu
6 – 8 Tbsp. lemon juice, freshly squeezed
Blend all the ingredients together in a blender or food processor until creamy and foamy.
It is best to chill all the ingredients before mixing to serve immediately. Try other fresh pressed juices or even berries for different flavors.
