Grilled vegetables

Makes 4 – 6 servings


1 Red Pepper

1 Green Pepper

200 – 250 g. Cherry Tomatoes

4 – 5 Small onions

1 zucchini squash

1 large eggplant

150 g. mushrooms

1 package marinated tofu

10 – 12 small red potatoes, cooked

Herbs or seasonings of choice



Cut the vegetables and tofu in sizes that will take about the same amount of time to cook tender. Place them on grilling sticks. Brush with a little olive oil and sprinkle with salt or herb salt. Herbs or seasonings of choice can be used as well. Grill over a grill or in the oven at 200°C until the vegetables are tender.
