Grilled vegetables – tender and slightly smoked. That is the taste of summer! Here is a suggestion on what to grill and how to season. Enjoy!
Ingredients
1 eggplant, sliced
1 zucchini, sliced
1 red pepper, sliced
1 green pepper, sliced
1 red onion, sliced
250 g. (8 oz) forest mushrooms
salt, to taste
2 – 3 Tbsp. olive oil
1 Tbsp. lemon juice
1 Tbsp. molasses
fresh basil, one handful
Instructions
Baste the vegetables with olive oil and sprinkle with salt. Grill on a medium hot grill until tender, 5 – 10 minutes. Cut the vegetables into smaller pieces. Drizzle with lemon juice, molasses and more olive oil. Season with salt and fresh chopped basil.
