Ingredients
10 dl (4 c.) grated zucchini
2 medium onions, finely diced
4 – 5 dl (1½-2 c.) oat flour
2 ½ dl (1 c.) quick oats
2 ½ dl (1 c.) cashew nuts
2 – 4 tbsp vegetable broth powder
4 tbsp nutritional yeast flakes
1 tsp salt
1 tsp garlic powder
Instructions
Preheat oven to 180°C (350°F). Prepare baking sheet by placing baking paper on it. (Coarsely grind the cashews in a food processor. Mix all ingredients together in a large bowl, start with 2 tablespoons of vegetable broth powder. Check for saltiness and add more as needed. Set aside for a few minutes so that the liquid comes out of the zucchini. If more moisture is needed, add some olive oil. If it’s too moist, add more oats. Form into burgers with the help of an ice-cream scope, then flatten them. Fry them on medium heat, 3 – 4 minutes on each side. Serve with whole wheat buns, organic ketchup, vegan mayonnaise or Oatly iMat Fraiche, sliced tomatoes, sliced white onions, green salad leaves and pickles. Assemble the Green Monster burger with desired condiments and vegetables.
Tips
Use a food processor to grind quick oats to flour.
Freeze leftover patties for a quick side dish or sandwiches.
