Ingredients
Marinade
½ dl (¼ c) olive oil
1 – 2 Tbsp. lemon juice, to taste
1 tsp. salt
1 tsp. basil, dry
½ tsp. oregano, dry
500 g (18 oz) tofu, diced
250 g (8 oz) cherry tomatoes
1 cucumber
½ sweet onion
1 dl (½ c) Greek olives
1 salad head
10 – 12 basil leaves, shredded
Instructions
Whisk together marinade sauce and pour over tofu. Marinate diced tofu for at least one hour. Stir every now and then.
Wash and prepare the vegetables for the salad and place in a serving bowl. Pour the marinated tofu and the marinade over the salad and lightly toss.
Serve right away.
