Breakfast is the most important meal of the day! It is great to start the day with a nutrient rich, tasty granola topped with fresh fruit! Granola is a toasted muesli. With granola, a healthy breakfast can be ready in just minutes.
Ingredients
1 ½ kg oats
3 ¼ dl. (1 1/3 c.) grated coconut
2 ½ dl. (1 c.) nuts and seeds, chopped
1 ½ tsp. salt
2 ¼ tsp. vanilla sugar
3 – 3 ½ dl. (1 ¼ – 1 ½ c.) raw sugar
3 dl. (1 ¼ c.) oil
5 – 7 dl. (2 – 3 c.) water
Instructions
Mix all dry ingredients in a large bowl. Add all wet ingredients and stir until everything is moist. Spread the granola on two oven pans (if you only have one, you may make this in two batches).
Bake the granola in the oven at 75° C (150° F) overnight for about 10 hours. In the morning roast the granola at 150° C (300° F) for 10-15 minutes until it is golden brown.
Or toast the granola at 125° C (250° F) until dry and golden brown. It is important to stir often – every 20-30 min. It may take 1 ½ – 3 hours to roast the granola. Use a kitchen timer and set the timer for 20 minutes at a time so you will not forget to check the oven.
Tip
For variety, dried fruits pieces can be added the last 10 minutes. You can also flavor it with almond essence or a little bitter almond extract. The recipe can be varied endlessly to taste and availability of ingredients. The amount of oil and sugar (which also can be change) determines whether the granola becomes crumbly (using a little or no oil and a little sugar) or crunchy as “Start” (more of both).
