This is one of my favorite desserts to make, decorate and eat! All of the many types of fruit give this pizza endless options for decorating and taste. Though this is a dessert, which means more calories, it has the bonus of vitamins and minerals from the fruit and even fiber from the oats. This is a great way to serve up fresh fruit for guests on a warm summer day!
Crust
Ingredients
1 ¾ dl. (¾ c.) oil
1 ¾ dl. (¾ c.) maple syrup
3 tsp. vanilla sugar
4 ¾ dl. (2 c.) oats
3 ½ dl. (1 ½ c.) flour
½ tsp. salt
Instructions
Mix the liquid ingredients together. Add the dry ingredients and mix well. Form into a large pizza bottom shape. Bake at 200°C for 12 – 15 minutes or until golden brown. Allow to cool.
Topping
Ingredients
1 package gogreen Visp or Alpro Soya Vispbar or other vegan whipped topping
½ tsp. vanilla sugar, optional
colorful fruit to decorate
Whip the cream stiff and add vanilla sugar, if desired. Spread evenly over the cooled pizza bottom. Place the fruit decoratively on the pizza. Keep cool until served. Enjoy!
Tip
This is an easy dessert to make ahead and it can even be decorated up to several hours before serving (depending on the type of fruit chosen).
