Banana Nut Pancakes
Ingredients
1 – 2 ripe bananas
1 Tbsp. canola oil
2 Tbsp. maple syrup
1 tsp. vanilla sugar
2 ½ dl (1 c.) whole wheat flour
¼ tsp. salt
1 ½ tsp. baking powder
1/8 tsp. cinnamon
¼ cup walnut pieces
water
Instructions
Mash the bananas and place in a bowl. Add the oil and syrup. Mix the dry ingredients together. Add to the wet. Add additional water as needed to make a soft batter. Fry until golden brown on both sides.
Pineapple Sauce
Ingredients
1 tbsp. cornstarch
1 tbsp. water
1 ¼ dl. (½ c.) pineapple juice
2 Tbsp. orange juice
Instructions
Mix the cornstarch and water together until smooth in a small saucepan. Add the pineapple juice and orange juice. Cook until thickened. Serve on top of banana pancakes and sprinkle with toasted coconut.
