Baked oatmeal

This is one of my favorite ways to start the day. When eaten fresh out of the oven, there is a crispy top and a creamy inside to this porridge. It needs a little time in the oven, so mix it up before getting ready for the day and it should be ready when you are.

 

Ingredients

7 dl. oats

1 dl. coconut flakes

1.5 dl. chopped dates

1 tsp. salt

½ dl. oil (or less)

5 dl. boiling soy milk

5 dl. boiling water

 

Instructions

Mix the first four ingredients in a large bowl. Add the oil and mix well. Heat the milk and water. Keep it under supervision so it does not boil over. Add boiling liquid at a time. Bake in a shallow glass dish at 175°C for 30-40 minutes.
