Apple Waffles

100 g (3 ½ oz) margarine
400 g (14 oz) apples
1 dl (½ cup) white flour
1 dl (½ cup) whole wheat flour
2 dl (1 cup) soy milk
2 tsp baking powder
1 tsp vanilla sugar
2 tbsp potato flour
Cardamom
Possibly a pinch of salt

Melt the margarine. Peel the apples, remove the core and grate. Squeeze out the liquid and place the grated apple in a bowl with the other ingredients. Whisk together to a lump-free batter. Bake the waffles in a waffle iron until they have a nice color. Serve with maple syrup, jam and cream or ice cream.

Tip
You can replace the cardamom with cinnamon, more vanilla or any other flavoring you like.
