Here is a tasty way to enjoy apples for breakfast! It is not difficult, just requires a little planning. Enjoy!
Ingredients
8 – 10 medium apples
½ dl. (¼ c) raw sugar
½ t. cinnamon
2 T. cornstarch
8 whole grain tortillas
olive oil, for brushing
Cinnamon, for sprinkling
Sugar, for sprinkling
Instructions
Core, peel and slice apples. Add the raw sugar, cinnamon and cornstarch, mixing well. Place several tablespoons of the apple mixture in the middle of a tortilla and roll the tortilla around the apples. Place in an oiled glass baking dish. Repeat with the remaining apples and tortillas. Brush the tortillas with olive oil and sprinkle with cinnamon and sugar. Cover with aluminum foil. Bake at 175°C (350° F) for 30 – 40 minutes, until the apples are soft. Remove the foil and bake for 10 minutes more or until the tops are crispy and golden.
Tip
I usually keep a mixture of cinnamon and sugar in a glass jar with my spices. This works great to sprinkle on top of the burritos.
