Warm pea soup on Friday nights, that is one thing I remember from growing up. Pea soup is a comfort food for me and is a favorite for my husband, too. Enjoy this nutritious, delicious, filling soup.
Ingredients
500 g. (18 oz) dried peas, fast cooking
1 ½ l. (6 c.) water
2 onions, diced
2 carrots, diced
4-5 small potatoes, diced
1 celery stalk, diced
1 ½ tsp. celery salt
½ tsp. salt
½ tsp. basil
1 tbsp. yeast flakes
1 bay leaf
1 tbsp. olive oil
Instructions
Simmer everything until soft. Blend until smooth.
