This delicately flavored tofu egg salad comes from Antonella. Its great taste hides the fact that it is low in fat and free from cholesterol! Enjoy it in sandwiches and on crackers!
Ingredients
I package soft (silken) tofu – 3,75 dl (350 g)(12 oz)
4 Tbsp. soya mayonnaise
¼ tsp. dried dill
¾ tsp. salt
¼ tsp. mustard
¼ tsp. turmeric
¼ tsp. honey
2 tsp. diced pickles
1 tsp. minced capers
2 Tbsp. minced green onions
2 Tbsp. minced celery
Instructions
Drain the tofu and pat dry with paper towel. Grate the tofu into a bowl. Mix the mayonnaise with the dill, salt, mustard, turmeric and honey, then add to the tofu. Mix in the remaining ingredients. Season if needed and refrigerate.
