Anki made these pancakes for me a few years ago and I was hooked. This recipe became and has remained my favorite Swedish pancake recipe and I have tried others! I have never had them fail and they can also be made gluten-free.
3 dl. (1¼ c.) soymilk
2 dl. (¾ c. ) coconut milk
2 dl. (¾ c.) white flour or spelt flour
1 dl. (¼ c.) oats
2 Tbsp. soy flour
2 Tbsp. potato flour
½ tsp salt
½-1 Tbsp. fructose (optional)
1 tsp. vanilla sugar (optional)
Instructions
Blend all the ingredients in a blender. Mix well. Fry pancakes on medium- high heat in an oiled frying pan or in a new teflon coated pan without oil. Add more liquid to the batter as needed.
Tip
For gluten free buckwheat pancakes, exchange 2 dl. (¾ c.) flour and 1 dl (¼ c.) oats for 1½ dl. (2/3 c.) buckwheat flour and 1½ dl. (2/3 c.) rice flour.
