There is nothing like cold home-made ice cream on a hot summer day! This tofu ice cream is creamy with a rich taste of sweet strawberries. Plus, those delicious strawberries give you vitamins and antioxidants, and the creamy tofu gives you protein. As a bonus, it is cholesterol-free! What a great way to enjoy a cold treat and still treat your body well!
Ingredients
500 g. (18 oz) frozen strawberries
4.5 dl. (1 ¾ c.) tofu, silken
1 dl. (½ c.) vanilla soy milk
1 dl. (½ c.) maple syrup
1 dl. (½ c.) light olive oil or canola oil or coconut cream
2 Tbsp. fresh pressed lemon juice
1 Tbsp. vanilla sugar
fresh strawberries to garnish
Instructions
Blend all the ingredients in a food processor or mixer until smooth, except the fresh strawberries. Divide the ingredients as needed to fit into the food processor or mixer. Freeze in an ice cream freezer. Garnish with fresh strawberries.
