Pumpkin Bread

Pumpkin is a great autumn vegetable! It is packed with fiber and beta-carotene, which the body uses to make vitamin A. So here is a dessert recipe using pumpkin and wonderful spices!

Ingredients
5 dl. (2 c.) whole wheat pastry flour
3 tsp baking powder
½ tsp salt
1 dl. (½ c.) oil
2 ½ dl. (1 c.) sugar
½ tsp. cinnamon
½ tsp. nutmeg
½ tsp. cloves
2 ½ dl. (1 c.) mashed cooked pumpkin
4 tbsp coconut milk

Instructions
Oil a bread pan well. Place all the dry ingredients in a bowl and mix together. Mix the liquids together separately. Then mix all quickly together and pour into an oiled pan. Bake at 175° C (350° F) for 60 -70 minutes. Cool on a rack before slicing.
