Potato Salad

I have tasted so many different potato salads and most all of them were good. But here is something similar to what I grew up eating – still my favorite! Enjoy! 

 

Ingredients

700 g. (1 ½ pounds) potatoes, cooked and peeled

3 dl. (1 ¼ c.) dressing

½ red onion, finely chopped

2 pickles, finely chopped

2 celery stalks, finely chopped

1 carrot, finely chopped

chives, to decorate

3 Tbsp. pickle juice

 

Instructions

In a bowl combine all the ingredients. Sprinkle with finely chopped chives.

 

Dressing Ingredients

1 ¼ dl. (½ c) soy milk, unsweetened

¾ dl. (1/3 c) light vegetable oil

¾ tsp. onion powder

1/8 tsp. garlic powder

½ tsp. salt

 

juice from one lemon

 

Dressing Instructions

In a mixer or with a hand mixer, blend together all the ingredients except the lemon juice. When the mixture is well mixed, stir in the lemon juice until thickened.
