I really like the taste of peach and coconut together. That is what we have in this breakfast pudding! The delicate flavor of the peaches are mixed with the creamy consistency of coconut milk to make for a great way to start the day.
Ingredients
4 dl (1 2/3 c.) water
3 dl (1 ¼ c.) coconut milk
3 dl (1 ¼ c.) peach juice (from the canned peaches)
½ tsp salt
2 dl (¾ c.) millet
1 can peaches, 810 g (28 oz)
1 tsp. vanilla sugar
1 – 2 dl (¼ – ½ c.) coconut almond milk
Instructions
Bring the water, coconut milk, peach juice and salt to a boil. Add the millet and cook until very soft, about 40 – 50 minutes. While the millet is still hot, blend it with the canned peaches and any remaining peach juice until very creamy. Use the coconut almond milk to help the mixture blend. Divide the amount of millet and peaches to fit into the blender (blending ½ at a time). Add the vanilla to the blended mixture and mix. Chill.
