Jansson’s temptation, a creamy potato gratin, is a traditional Christmas dish in Sweden and it is good. Here is a completely plant-based Jansson’s made with cashew nuts. Enjoy!
Ingredients
2 dl (1 c.) cashew nuts (raw, unsalted)
1 l (4 c.) water (divided)
4 tsp vegetable seasoning
¾ tsp salt
1 Tbsp + 1 tsp cornstarch
1 Tbsp Tartex
5-8 medium potatoes, cut in small strips
1 onion, sliced
Instructions
Preheat the oven to 175°C (350°F). Mix the cashew nuts, vegetable seasoning, salt, cornstarch and Tartex in 3 cups water in a blender so it becomes very creamy. Add the remaining water and mix. Layer the potatoes, onions and sauce in a baking dish. The potatoes and onions should be completely covered by the sauce. Cover with foil and bake in the oven for 1½ hours or until well baked. Remove the foil and bake for another half hour until golden.
