I learned to enjoy Indian food in my first year of university, thanks to some good friends. The rich seasonings and spicy flavors make it one of my favorite types of food even today. Here is a simple lentil stew with great taste. Thank you, Georg, for sharing this with us.
Ingredients
1 onion
2 carrots
2 garlic cloves
2 tbsp. oil
1 tbsp. grated fresh ginger
1 tsp. ground coriander
½ tsp. ground cardamom
1 tsp. cinnamon
4 dl. (1 2/3 c.) red lentils, dry
1 can coconut milk
1 can crushed tomatoes
1 cube vegetable stock
Approximately 2 – 3 dl. (¾ – 1 ¼ c) water
Salt, to taste
Instructions
Chop the onion, grate or cut the carrots into thin strips and crush the garlic. Sauté everything in oil for a while. Mix in the spices and stir. Pour in the coconut milk, crushed tomatoes, broth and lentils and cook about 20 min. Add salt to taste. Eat together with rice, such as basmati rice.
