couscous, preferably whole grain
1-2 red onions
2-3 dl. frozen peas (no need to thaw)
2 tsp. curry powder
1 red pepper
1 dl. fresh or canned chanterelles or mushrooms
1 clove of garlic
Cook the couscous according to the description on the package for 4 people. Chop the onion and pepper. Cut the mushrooms into pieces. Sauté the mushrooms, onions and peppers with the curry powder in a little oil. When it is done, mix in the peas and then mix everything with the couscous. It’s ready to serve. If you want to you can pack it in small bowls which you then stack up on a plate and garnish with pineapple chunks, cocktail tomatoes and lettuce.
Try other vegetable combinations or even seasonings.
