Cashew Pear Cream

This sweet and creamy topping tastes great on fruit salad, pancakes, waffles, and even apple burritos!

Ingredients
2 dl. (¾ c) cashews
5 ripe pears, conference, peeled
1 t. vanilla sugar
1 – 2 T. maple syrup or sugar
pinch of salt

Instructions 
Blend the cashews to a fine powder in a blender. Add the remaining ingredients and mix until very smooth and creamy. You may need to stop and scrape the sides of the blender, occasionally.

Tip
You can also use 815 g (28 oz) can of pears, drained instead of the ripe ones. Add a little water (1 – 3 Tbsp.) to help the blender run and don’t add any sweetener.
