Ingredients
240 g. (3 1/3 c.) frozen broccoli
2 small onion, cut into wedges
2 small carrot, diced
2 medium potato, diced
500 ml. (2 c.) water
2 tsp. salt
80 g. (½ c.) cashews
2 Tbsp. yeast flakes
1 clove garlic
2 Tbsp. lemon juice
250 ml. (1 c) water
1 Tbsp. cornstarch
Instructions
Steam the frozen broccoli until just tender and set aside. Simmer the next four ingredients until tender. Place the onion, carrot, potatoes and water in the blender with the remaining ingredients. Blend until smooth and creamy. Pour into a pan and heat until it boils and thickens. Add the steamed broccoli and serve.
