Blueberry Lime Soup
There are some tastes that just go together. I think one of them is blueberries with a zest of lime. So this is a wonderful alternative to traditional blueberry soup. As a plus it is even low in refined sweeteners!
500 g blueberries
6 – 7 dl water
2 ½ dl pitted dates,
1 tbsp maple syrup or sugar, according to taste
3 tbsp cornstarch + about 2 ½ dl water
Juice of one lime
Zest of one lime
Cook the dates and half the blueberries with 6 – 7 dl water, until the dates are soft. Blend the date mixture, either in a blender or with a hand mixer, until it is smooth and creamy. Combine the cornstarch with 2 ½ dl water. Add it to the date mixture and cook until it thickens. Add the rest of the blueberries, the lime zest and juice, and maple syrup or sugar as needed.
