Biscuits and gravy is a typical American breakfast. This is something that I remember from my childhood. It was my father who would bake our biscuits. They were light and fluffy and very good with butter. This is not my dad’s recipes, but a little healthy version.
Ingredients Drop Biscuits
3½ dl (1 ½ c.) whole wheat flour
1 ¼ dl. (½ c.) white flour
1 Tbsp. baking powder
1 tsp. salt
¾ dl. (1/3 c.) olive oil
3½ dl. (1 ½ c.) soy milk
A little extra water, as needed
Instructions Drop Biscuits
Preheat the oven to 225° C (440° F). Mix the dry ingredients together in a mixing bowl. Whisk together the milk and oil. Add the liquids to the dry ingredients all at once. Stir just until no dry flour remains (add a little water, if needed). Quickly drop by large spoonfuls onto a baking paper lined baking sheet. Place in the oven and bake for approximately 12 minutes, until the biscuits start to brown. Remove to a cooling rack. Serve immediately with gravy or margarine and jam.
Ingredients Gravy
6 dl. (2 ½ c.) water
1¼ dl. (½ c.) cashews
1 tsp. olive oil
1 tsp. onion powder
2 ½ tsp. vegetable seasoning
½ tsp. salt
2 Tbsp. cornstarch
Instructions Gravy
Blend all ingredients until smooth. Pour into a sauce pan and bring to a boil to thicken.
