Growing up, late summer meant blackberry season. We would go picking and my mother would make blackberry cobbler. I have adapted her recipe to make it a little healthier, but it tastes just as good to me. If the berries are already picked this recipe takes only a few minutes to make!
Ingredients
Mixed berries or selected fruit
½ – 1 dl. sugar as needed
2 ½ dl soy milk
2 ½ dl. whole wheat flour
½ dl sugar
½ dl. oil
4 tsp. baking powder
¼ tsp. salt
Instructions
Place the fruit on the bottom of a glass-baking dish. You may need to add sweeteners to berries or fruit depending on how tart they are – start with ½ dl. – 1 dl. sugar and mixed it with the fruit. Mix together the remaining ingredients. Pour over the fruit. Bake at 175°C for 1 hour, but make sure it does not burn. Test with a knife to see that it comes out clean.
