It is almost time to pull out the grill and enjoy the relaxation of warmer days. Why not try a low-fat, high protein barbecue with tofu! This recipe takes a little time, but with good planning, it is not difficult and the results are wonderful. A special thanks to my university roommate, Julianne, for this recipe.
Marinade Sauce
Ingredients
3 Tbsp. peanut butter
½ dl. (¼ c.) tahini
2 – 5 dl. (1 – 2 c.) water
1 Tbsp. paprika powder
½ tsp. garlic powder
2 tsp. salt
2 blocks firm tofu, frozen and thawed
Instructions
Wisp together the marinate sauce until smooth. Slice the tofu into about 8 pieces per block. Marinate the tofu slices for at least one hour. Bake the tofu in an oven form with the marinate sauce for 20 minutes at 175°C (350° F).
Barbecue Sauce
Ingredients
1 med onion, chopped
1 clove garlic, chopped
6 dl. (2 ½ c.) tomato sauce
½ dl. (¼ c.) water
2 ½ dl. (1 c.) maple syrup
1 Tbsp. dark brown sugar
1 ½ tsp. salt
¾ tsp. cayenne pepper (or to taste)
1 ½ tsp. parsley, dried
1 ¼ dl. (½ c.) lemon juice
2 Tbsp. soy sauce
Instructions
Sauté the onion and the garlic together. Combine remaining ingredients except the lemon juice and the soy sauce. Bring to a boil. Simmer for one hour. Then add the lemon juice and the soy sauce. Coat the marinated tofu with the sauce. Bake at 175°C for about 10 minutes or until thoroughly heated. Serve while hot.
