Apricot Balls

Makes about 20 bolls

Orange zest and cranberries make these little balls extra special! With their sweet taste and chewy texture, these make a tasty ending to any meal!



150 – 160 g. dried apricots

85 g. coconut flakes

100 g. almond paste

zest of one orange

½ t. vanilla sugar

pinch of salt

1 – 2 T. fresh orange juice

50 g. dried cranberries

coconut flakes for rolling



Place the dried apricots in a food processor and mix until they are finely chopped. Add the coconut and almond paste, orange zest, vanilla sugar and salt. Mix until well combined. Add the cranberries and mix until they are coarsely chopped. Add as much orange juice as needed to form a soft, sticky mixture. Roll into small teaspoon size balls. Gently roll in the coconut flakes to coat. Place in an airtight container and chill for at least 30 minutes before eating. Store in the refrigerator.
