Ingredients
75 g (¾ c.) white flour
75 g (¾ c.) whole wheat flour
4 tsp baking powder
¼ tsp salt
50 g (¼ c.) sugar
250 ml (1 c.) coconut cream
50 ml (¼ c.) oil
3 apples
3 conference pears
Zest of 1 lemon
1 Tbsp fresh lemon juice
½ tsp cinnamon, opt.
Instructions
Core and cut the apples and pears, but do not peel. Mix with the lemon zest, lemon juice and cinnamon as desired. Place in a baking dish. In a separate bowl mix together the flours, baking powder, salt and sugar. Add the coconut cream and oil and mix until smooth. Pour the batter over the apples and pears. Use a fork and lift some of the fruit so that the batter runs down in between. Bake at 175° C (350°F) for 35 – 40 minutes. Watch so as not to burn.
