Autumn has arrived with its cooler weather and with it have come apples. I love apples! The smell of freshly picked apples is so aromatic. Here is a great way to use apples for a breakfast or light dessert. The combination of apple, orange and cinnamon is one of my favorites!
Ingredients
4 apples
juice of 1 orange
1 ½ Tbsp. cornstarch
½ tsp. cinnamon
½ dl. (¼ c.) natural sugar, optional
2½ dl. (1 c.) oats
1¼ dl. (½ c.) whole wheat flour
2 Tbsp. wheat germ
2 Tbsp. nuts, chopped
2 Tbsp. brown sugar
1 pinch salt
½ tsp. vanilla
½ dl. (¼ c.) oil
2 Tbsp. water
rind of 1 orange, finely grated
Instructions
Combine the apples with the juice of one orange, cornstarch, cinnamon and natural sugar, if the apples are not sweet. Place in a baking dish and back at 175° C (350° F) for 15 minutes. While the apples are baking, prepare the crust. Combine the oats, whole wheat flour, wheat germ, nuts, brown sugar, salt and vanilla in a bowl. Combine the remaining ingredients separately and add to the dry ingredients. The mixture should be moist and crumbly. Sprinkle over the pre-baked apples and bake for about 20 minutes at 175° C (350° F) or until the topping is crispy and golden.
