Ingredients
4 – 5 beets
4 – 5 carrots
1 onion
1 – 2 potatoes, optional
225 g (8 oz) pickles
1 tsp salt
Instructions
Boil the beets, carrots and potatoes with skins on until soft. Let them cool. Peel and chop the onion. Peel and cut the beets, carrots, potatoes and pickles into small pieces. Mix everything in a bowl. Season with salt. Feel free to cook this one day before it is to be served so that the flavors can marinate.
