Georg shared this fun recipe on Dagens. It takes a little time, but it is well worth the effort. The taste is great! Why not make spring rolls together with friends!
Ingredients
½ leek
1 medium onion
1 large carrot
About 100 g. (3.5 oz) cabbage
About 2-3 dl. (¾ – 1¼ c.) glass noodles
150 g. (5.2 oz) vegetarian mince (like soy mince, vegi-burger)
Salt/herb salt
Spring roll dough (bought at an Asian store)
Canola oil
Instructions
Take the spring rolls out of the freezer and allow them to thaw. Take them out of the package and place them under a wet towel so that they don’t dry out. Rinse the vegetables. Chop the onion and leek. Grate the carrot and shred the cabbage. Prepare the noodles according to the instructions on the package and then cut them into smaller pieces. Mix everything with the thawed mince and season.
Carefully peel one spring roll from the pack so that it remains whole and leave the rest under the wet towel. Place a small amount of the filling in the roll and brush the edges with water so that the roll will “glue together.” Prepare all the spring rolls and fry them in oil over medium heat until they are golden brown. Serve immediately.
