Pannacotta means cooked cream in Italian. I learned this from my friend Vivianne. This is her recipe for a plant-based version. The recipe is very simple and quick to make, but looks good enough for company!
3 dl. (1¼ c.) soy yoghurt
1 dl. (½ c.) soy or oat cream
1 tsp. vanilla sugar
2 packets Vegegel (Dr. Oetker) (or 1 tsp agar agar powder)
3 Tbsp. agave syrup or according to taste
fresh or frozen berries to decorate
Mix all the ingredients together except the berries. Bring to a boil and pour into prepared forms. Allow to chill in the refrigerator. Decorate with berries.
