Ingredients
6 sweet potatoes
the juice of 1 – 2 oranges
finely grated rind of 1 orange
2 Tbs olive oil
3 Tbs maple syrup
1⁄4 tsp cinnamon
1⁄4 tsp salt
Instructions
Peal and cut the sweet potatoes into bite-size pieces. Place the potatoes in an oven-proof dish with the remaining ingredients. Combine so that everything is evenly distributed. Cover and bake at 175°C (350° F) for about 45 minutes, until the sweet potatoes are soft. Remove the foil and bake uncovered for about 5 minutes to allow a light syrup to form. Serve warm.
