Ingredients
1 bunch fresh kale
1 – 2 Tbs olive oil
1⁄2 tsp salt
finely grated rind from one orange
finely grated rind from one lime
the juice of one orange
the juice of one lime
1⁄2 – 1 dl dried cranberries
1⁄2 – 1 dl walnuts
1 can mandarine oranges
Instructions
Remove the kale from the stalks and finely chop. Mix the kale with the olive oil and salt in a large bowl. Massage the kale with your hands until it becomes soft and wilts. This can take between 30 seconds to several minutes depending on the kale. Add the rind and juice from the orange and lime. Massage them with the kale. Add the remaining ingredients and combine. Place in the refrigerator until serving. This salad stays fresh for several days when kept in the refrigerator.
