Ingredients
8 oranges *
3 Tbs maple syrup, or more to taste
2 1⁄2 cm (1 inch) piece fresh ginger, more or less to taste
1 green apple

Cut the top and the bottom off the oranges. Cut away the peel and the white pith. Working over a bowl to gather the juice, cut out each section of the oranges. Remove the seeds. Press the remaining juice from the orange pith and discard the pith. Pour the juice off the fruit into a pot. Thinly slice the ginger into the pot with the juice and add the maple syrup. Simmer for about 8 – 10 minutes, until a light syrup is formed. Allow to cool. Remove the ginger slices. Thinly slice the apples into the bowl with the oranges. Pour over the juice, ginger juice and carefully combine.* You can use half blood oranges and half regular oranges.
