This is a great summer salad that can be ready to eat in no time! There are savory beans mixed together with the tangy tomatoes and lemon juice and then a little kick from the onion, too! Yum! Not only does it taste great, but it is full of protein and fiber. Thank you, Georg, for sharing this delicious salad!
Ingredients
2 cans bean salad with whole wheat(410 gr) (ZETA)*
1 small jar sundried tomatoes
1 red onion
2½ Tbsp. olive oil
1 Tbsp. fresh pressed lemon juice
Salt, according to taste
Parsley
Instructions
Rinse the beans and wheat (from the cans) and allow to drain. Finely slice the tomatoes and chop the onion. Mix the ingredients together and snip the parsley on top.
*2 cups of mixed beans and 2 cups of cooked whole wheat berries
