When it is cold outside, it’s mighty good with a hot soup. And in the winter it is easy to find cauliflower. So why not a cauliflower soup? Here is a creamy cauliflower soup recipe that Cacyne Cortez has created.
Ingredients
1 small head of cauliflower or ½ large
1 medium onion
2 small potatoes, or 1 large
2 cloves garlic
1 tsp olive oil
2 tablespoons sunflower seeds, raw
1 bay leaf
1 liter (4 c.) water
1 cube vegetable bouillon powder
1 tsp lemon juice
½ – 1 tsp Herbamare herbal salt
½ teaspoon an herb like basil, thyme or rosemary
Instructions
Peel and clean the potatoes, onion, garlic and remove the leaves from the cauliflower. Cut all the vegetables into small pieces and fry everything in a pan in 1 teaspoon olive oil until golden. Add 1 tsp water if needed so that it does not burn on. Add 1 liter water, bay leaf, sunflower seeds and boil. When all the vegetables are tender, remove the bay leaf, add the broth and lemon juice and blend everything into a smooth soup. Add the optional herbs and season with herb salt.
