I like carrots. They are a very good source of beta-carotene, which our bodies use to make vitamin A. But not everyone likes carrots. Here is a great recipe that can help those that have a hard time eating carrots. This creamy sauce with the crunchy nuts is a great combination! Thank you Georg for sharing this recipe.
Ingredients
4 carrots (about 250 g or 8 oz)
2 dl (¾ c) vegetable broth
2 dl (¾ c) soy sour cream like Oatly IMAT Fraiche
1 teaspoon salt
½ teaspoon thyme
1 dl (½ c.) grated soy cheese
1 dl (½ c.) finely chopped / grated hazelnuts
Instructions
Peel and cut the carrots into small pieces. Cover and let them boil in the broth for about 10 minutes or until soft. Blend to a puree. Mix in the other ingredients, except the nuts and cook a few minutes. Stir in the nuts. Serve with freshly boiled pasta.
