Broccoli is a nutritional bomb, full of vitamins, minerals, antioxidants and phytochemicals. It belongs to the cabbage family of vegetables, which are known for their healthy properties. So we should enjoy broccoli often. Cacyne created this simple broccoli salad with a refreshing twist!
Ingredients
1 large head broccoli (or 2 small)
1 apple, red
1 handful of toasted almonds or walnuts
1 handful of grapes, optional color
soy mayonaise
Instructions
Toast the nuts in the middle of the oven at 175 degrees for about 10 minutes. Cut the broccoli into florets and save the stem for a salad or soup. Steam the broccoli in a pan in a strainer or special steam cooker, if you have one, for about 10 minutes. The broccoli should still be bright green and slightly crispy, not brown and soft all the way through. Cut the grapes in half and cut the apple into slices and then into thin slices across. Mix everything in a bowl, garnish with some of the nuts before serving.
Soy Mayonnaise
Ingredients
1 dl oil
2 dl soy milk, unsweetened
2 tsp nutritional yeast flakes
2 tsp herb salt
lemon juice
Instructions
Mix the oil and soy milk in a blender for about 2-3 minutes with the yeast flakes and salt. Pour into bowl and drizzle a little lemon juice while stirring with a spatula. Pour as much juice as needed for the mixture to get a thick consistency similar to mayonnaise.
