Ingredients
1 medium onions, chopped
1 Tbsp. olive oil
4 – 5 potatoes, peeled and cubed
½ carrot, cut into very thin, small strips
2 tsp. vegetable seasoning
Water to cover the vegetables
1 ½ dl. frozen spinach leaves (not chopped)
¼ tsp. salt
1 – 2 dl. Oatly iMat
Instructions
Sauté the onions in the olive oil until clear. Add the potatoes, carrot and vegetable seasoning. Just cover with water and boil until tender. Remove a few potato pieces and mash them smooth to help thicken the soup. Stir the mashed potatoes into the soup. Add the spinach and salt. Cook just until the spinach is wilted. Add some Oatly iMat.
